Spinach Mushroom Salad
Need to plan ahead - salad needs to chill for 30 minutes. Nice, tangy dressing!
Ingredients
5 tbsp Olive or vegetable oil
1 tbsp Lemon juice
1 tbsp Lime juice
1-1/2 tsp White wine vinegar or cider vinegar
1 Garlic clove, minced
3/4 tsp Minced fresh parsley
1/4 tsp Salt
1/4 tsp Ground mustard
1/8 tsp Dried basil
1/8 tsp Dried oregano
1/8 tsp Rubbed sage
dash to 1/8 tsp Coarsely ground pepper
8 Medium fresh mushrooms, sliced
7 cups Torn fresh spinach
Preparation
In a small bowl, combine first 12 ingredients; mix well. Add mushrooms and toss to coat. Cover and refrigerate for at least 30 minutes. Just before serving, toss the spinach and mushroom mixture in a salad bowl.
